In a separate bowl mix yeast, water and sugar. Let rest till you have a foamy surface.
Add the wet ingredients to the the flour semolina mixture as well as the olive oil. Using a kitchen machine knead the dough till you have a firm structure.
Let rise for 1 hour at room temperature and afterwards one night in the fridge.
Before using the dough bring back to room temperature.
Bake at 250°C on a pizza stone till golden brown (yes you should get one)
