Rilette of duck


Servings: 4 persons 

Ingredients: 

  • 1 duck breast fried and chilled, or any other meat of duck
  • 3 tbsp goose fat
  • 1 tsp ground coffee
  • 1 tsp lemon skin 
  • Pepper, salt
  • Fresh bread
  1. Pull off the meat and defibrate it.
  2. In a bowl, combine meat fibers, lemon skin, coffee ground.
  3. Bring to taste with pepper and salt.
  4. Serve on fresh bread.
